I’ve got a 28 oz jar of pumpkin to deal with, so this is the first of many pumpkin recipes 🎃
These muffins are super easy to make and a great choice to pair with your breakfast or caffeine! Compared to store bought muffins, these are lower in sugar and saturated fats, and higher in fibre and unsaturated fat ✅. Portion sizes are more realistic when muffins are homemade too... muffins from the grocery store or fast food restaurant are MASSIVE these days.
Pumpkin is high in vitamins A & C - so it’s not just trendy, it’s nutritious too 😊

Side note, if you like to make pumpkin seeds after carving the pumpkin - be mindful of how high calorie they are! Season them well so that less is really more 👌🏼
