I’ve got a 28 oz jar of pumpkin to deal with, so this is the first of many pumpkin recipes πŸŽƒβ£
These muffins are super easy to make and a great choice to pair with your breakfast or caffeine! Compared to store bought muffins, these are lower in sugar and saturated fats, and higher in fibre and unsaturated fat βœ…. Portion sizes are more realistic when muffins are homemade too... muffins from the grocery store or fast food restaurant are MASSIVE these days. ⁣
Pumpkin is high in vitamins A & C - so it’s not just trendy, it’s nutritious too 😊⁣

Side note, if you like to make pumpkin seeds after carving the pumpkin - be mindful of how high calorie they are! Season them well so that less is really more πŸ‘ŒπŸΌ
